  • 6 potatoes You can really use any kind
  • 1 Cup Cashews Chopped
  • 3/4 Cup Cilantro Washed and chopped
  • 1 1/2 Cups tomatoes Washed and diced
  • 4 Sprigs Rosemary
  • 4 Dashes Ground Pepper
  • 5 Drizzles olive oil
  • 1 Lime Juice from (if you need more, add another half of a lime!)


Bring water to a boil and add potatoes. Cook on high heat for 20-25 minutes, or until potatoes are soft in the center.

Boiling potatoes

In a bowl, combine cashews, cilantro, olive oil, tomatoes, and rosemary. Mix lightly.

Mixed ingredients

After potatoes are cooked through, allow to cool.

Cooling potatoes

Dice potatoes into small bite-size pieces.

Chopped potatoes

Combine all ingredients into a larger bowl and stir. Add more olive oil as needed (should be moist). Squeeze limes over dish and enjoy!
