Ingredients
- 2 Drizzles olive oil
- 3-5 Parsnips Peeled and chopped
- 1.5 Cloves garlic Minced or chopped finely
- 1 Cup Black beans Fresh or canned (if canned, low sodium)
- 2 Dashes Red pepper flakes Optional
- 1/2 Lime Juiced
- 4 Dashes Ground Pepper
Instructions
Pre-heat oven to 425 degrees.
Place parsnips and garlic on baking tray and drizzle with olive oil. Add spices and lime and bake for 15-20 minutes.
Remove from oven and place beans on top. Let sit for a few minutes. Enjoy!
