  • 2 Drizzles olive oil
  • 3-5 Parsnips Peeled and chopped
  • 1.5 Cloves garlic Minced or chopped finely
  • 1 Cup Black beans Fresh or canned (if canned, low sodium)
  • 2 Dashes Red pepper flakes Optional
  • 1/2 Lime Juiced
  • 4 Dashes Ground Pepper


Pre-heat oven to 425 degrees.

Place parsnips and garlic on baking tray and drizzle with olive oil. Add spices and lime and bake for 15-20 minutes.

Remove from oven and place beans on top. Let sit for a few minutes. Enjoy!
