Healthy and not too time consuming. This was a strange twist on what I had in my fridge and I think it turned out delicious. Mr. Mike approved anyways. Enjoy and let me know what you think!

You can make it as spicy as you’d like but definitely filled with healthy ingredients and tastes great!

Ingredients

Cauliflower and broth portion

  • 3 Drizzles Olive oil
  • 1 Head Cauliflower Chopped
  • 4 Pieces Baby corn Chopped
  • 1/2 Red Onion Chopped
  • 1 Can Lite coconut milk Make sure you shake it before you open it!
  • 5 Dashes Powdered Ginger You can use fresh grated if you have it
  • 5 Dashes Paprika
  • 5 Dashes Dill
  • 5 Dashes Ground Pepper
  • 5 Dashes Curry powder
  • 2 Dashes Cayenne pepper You can add more if you like it spicy. Mr. Mike doesn’t like it as hot as I do so I add spice to my bowl after I serve it!
  • 1 Juice from a lemon
  • Cilantro I love it so I add tons to my bowl when I’m done. Add as much as you’d like

Beef

  • 1 Pound beef I bought it in chunks as if for stew (I also wait until it’s on sale!) Mine is grass-fed but I get ya, work with what you can!
  • 2 Drizzles Olive oil

Instructions

In a big soup pot, bring olive oil to medium heat. Add cauliflower. You want to cook it until it’s cooked down, soft and brown all around. This took me about 12 minutes.

When you hit the 8 minute mark with your cauliflower, you want to bring a separate pot with olive oil to medium heat and add your beef chunks. Keep stirring both pots. (you are SO talented!)

Once the beef chunks are almost 100% cooked through (maybe 85%, some pink is fine), add your onion, spices, coconut milk, baby corn and HALF the lemon juice to you CAULIFLOWER pot.

After about 3 more minutes, add your beef chunks (and that yummy liquid that came to be at the bottom of the pot) to your cauliflower pot. Stir together. Cook for another 5 minutes on medium heat.

Squeeze the other half of the lemon or add the rest of the lemon juice and enjoy with cilantro on top. If you want more spice, add hot sauce or even more cayenne powder!
