  • 1 Eggplant Washed and chopped into slices (at least 1 in thick)
  • 2 eggs Beat
  • 1 Cup Gluten free flour blend
  • 3 Drizzles olive oil
  • 4 Dashes Ground Pepper
  • Sea salt To taste


Bring a saucepan and olive oil to medium heat.

On a plate or in a big bowl, add gluten free flour.

Take your eggplant slice and dip in the eggs and then coat in gluten free flour.

After both sides are covered in the flour, place in hot pan. Cook both sides for about 5 minutes. The outsides should get crispy. You may need to cook a little longer. While cooking, sprinkle salt and pepper on top.
