Ingredients

  • 4 Drizzles olive oil
  • 3 eggs
  • 1 Cup Gluten-free flour Could be Almond Flour or Brown Rice Flour
  • 3 Cups Broccoli Washed and chopped
  • 4 Dashes Ground Pepper
  • 4 Dashes Paprika
  • 4 Dashes Dill
  • 4 Dashes Garlic Powder
  • 1/2 Cup White onion Chopped

Instructions

Bring olive oil to medium heat in large pan.

In a mixing bowl, combine broccoli, onion, eggs, flour, and spices. Mix until you have a smooth ‘slimy’ consistency.

With your hands, form small patties. Mine were about the size of my palm. Place in pan and cook until brown, then flip. Total cook time for both sides was about 12 minutes total.

Raw egg will cook quickly. I like to cook until the outsides are golden brown. You can cook longer or shorter, depending on the consistency you prefer!

Cool and serve alone, or with salsa! This makes a great dinner, app, or snack!
