Catchy title right? Yuca, also known as Cassava Root, is a delicious carby side food high in antioxidants. ALso known to help reduce symptoms of arthritis and high cholesterol, this root is cheap and ridiculously easy to prepare.
Prep Time: 2 Minutes
Cook Time: 12 Minutes
Passive Time: 14 Minutes
Ingredients
- 4 Pieces Yucca Can be frozen
- 5 Dashes Dill
- 4 Dashes Ground Pepper
- 3 Drizzles Olive oil
- 1/2 Beefsteak tomatoes
- 3 Dashes Paprika
Instructions
Fill a medium-sized pot a little past half with water. (You will drain the liquid anyway, just enough to cover the root.) Bring to a boil
Add yucca to pot and cover. Cook 6 minutes.
Turn pot down to medium-high heat and cook for 4 more minutes. Yucca should be soft and a little darker in color.
Place in a bowl and immediately drizzle olive oil on top. Olive oil is to taste-I prefer mine fairly covered.
Sprinkle dill and paprika. Squeeze lemon all over and serve!
