The Zucchini and Herb Egg Plate is a quick healthy delicious meal you can prepare in under 15 minutes.

Cook Time: 12 minutes


  • 2 eggs Organic is always preferable!
  • 1 Zuchinni Chopped
  • 2 Tablespoons Ground flax
  • 3 Sun-dried tomatos Chopped
  • 1/2 White onion Chopped
  • 1 Tablespoon Olive oil
  • 1 Tablespoon Feta or blue cheese Optional
  • 1 Teaspoon Sesame oil
  • 1 Lime
  • 1 Teaspoon Red pepper flakes Optional


Place saucepan on stove at medium heat with olive oil.

When hot, add onions and sesame oil.

Cook onions for two minutes and add zucchini.

Saute until zucchini is soft in the center. This takes about 5 minutes.

When zucchini is tender, place all ingredients in saucepan into a small bowl and cover with a paper towel. Leave pan on medium heat (add a little more olive oil if necessary to prevent sticking.)

Beat two eggs until smooth and place in pan. Allow egg to settle flat, similar to an omelette!


After about 4 minutes, the bottom of the egg will cook through. Sprinkle the sun-dried tomatoes, dill, cheese, and red pepper flakes (if using) on top. Keep cooking until the egg on the top layer has cooked through. The dill, tomato, and cheese will fill the egg with flavor!

After egg has cooked through, place egg dish on a plate and sprinkle with flax. The serving is just a suggestion, I like to add lots. Flax is rich in fiber and helps keep your gut clean.
